Chicken and Walnut Salad

Recipe Description:

Easy quick salad. I keep these ingredients on hand and take a few extra minutes when I get home from the grocery store each week to wash the fresh vegetables/fruits so that when I'm rushing during the week, everything is ready. The leftover rotisserie chicken from one night becomes a chicken and walnut salad the next. The walnuts provide the crunch everyone loves in a salad; I use cottage cheese (lots of protein) instead of high fat dressing; the tomatoes provide a tartness and the grapes sweeten it up.

Ingredients:

  • Pre-cooked Rotisserie chicken
  • bagged salad
  • grapes (washed when brought home from the grocer)
  • bagged chopped walnuts (or you can substitute whatever nuts you have on hand)
  • cherry tomatoes (also washed when brought home)
  • shredded cheese
  • Low-fat cottage cheese

Directions:

Combine ingredients on top of bed of salad. I can pull out the ingredients, make salads for everyone, eat and clean up faster than I can pick up take-out, and this is a lot healthier!
