Quinoa with Artichoke Hearts and Walnuts

Recipe Description:

Adapted from Moosewood Restaurant - Cooks at Home

Recipe requires a little advance prep work, but then you have an easy, nutritious meal on the go.

Ingredients:

  • 2 cups water
  • 1 cup red or white quinoa
  • 1 tbs butter (or oil)
  • 1 tsp salt
  • 1 can artichoke hearts, cut into eighths
  • 1/2 cups minced scallions
  • 1 large clove garlic, chopped
  • 1 cup parsley
  • 1-2 tbs chopped fresh dill (1 tsp dried)
  • 1 tbs chopped tarragon (1 tsp dried)
  • 3 tbs olive oil
  • 1/4 cup lemon juice, more to taste
  • 1/2 cup chopped toasted walnuts (toasting optional)
  • add some goat cheese and grape or cherry tomatoes before serving
  • salt and pepper to taste

Directions:

Bring water to a boil, add salt and butter and quinoa. Cover, lower heat to medium low and cook for 12-15 minutes. Rinse quinoa in a strainer before cooking to remove bitter flavor.

Mix all other ingredients together and stir into the grain. Serve room temperature or chilled. Walnuts can be served separately to prevent them from becoming soggy.

Any grain can be substituted: couscous, bulghur wheat, rice, etc.
