Spicy Asian Noodles with Shrimp
Main course. Recommended side: garlic sauteed snow peas with water chestnuts. The ingredient list may seem long but this takes just five minutes to cook. The original recipe is from Cooking Light and calls for chicken.
Heat 2 teaspoons oil in small skillet over medium-high heat. Add ginger and garlic to pan; cook 45 seconds, stirring constantly. Place in a large bowl. Stir in remaining 1 teaspoon oil, shrimp and next six ingredients. Cook until shrimp turns pink, approximately 2-3 minutes.
Meanwhile cook noodles in boiling water for three minutes. Drain and toss with shrimp mixture. Garnish with chopped peanuts.
