Quick & Easy Mexican Stir Fry

Recipe Description:

A delicious, easy, and FAST Mexican-inspired meal the whole family will enjoy. Chock full of protein, this recipe can be modified in many ways.

Ingredients:

  • 2 Boneless Skinless Chicken Breasts cut into bite-sized pieces
  • 1 can Corn, drained
  • 1 can Black Beans, drained and rinsed
  • 1 can Ro*Tel Diced Tomatoes and Green Chilies
  • Salt & Pepper
  • Non-stick Cooking Spray or Extra Virgin Olive Oil
  • Optional Serving Suggestions: Over a bed of lettuce, over Rice, in a Tortilla Wrap, “Nacho” style with Tortilla Chips
  • Optional Toppings: Sour Cream, Salsa, Shredded Cheese

Directions:

  1. Lightly spray large skillet or fry pan with non-stick cooking spray or add small amount of Extra Virgin Olive Oil and bring to medium to high heat.
  2. Add Chicken pieces. Sprinkle with S&P to taste. Cook thoroughly.
  3. When Chicken is fully cooked (juices run clear), add Corn, Black Beans, and Ro*Tel.
  4. Mix all ingredients together over medium to high heat for a few minutes until mixture is heated throughout and most of the juice evaporates off.
  5. Remove from stove and serve in your favorite style. Some ideas include: alone, on a Salad, over Rice, in a Wrap, or with Chips.
  6. Top with Sour Cream, Salsa, and/or Cheese if desired.
  7. Enjoy!
