Quick & Easy Mexican Stir Fry
Recipe Description:
A delicious, easy, and FAST Mexican-inspired meal the whole family will enjoy. Chock full of protein, this recipe can be modified in many ways.
Ingredients:
- 2 Boneless Skinless Chicken Breasts cut into bite-sized pieces
- 1 can Corn, drained
- 1 can Black Beans, drained and rinsed
- 1 can Ro*Tel Diced Tomatoes and Green Chilies
- Salt & Pepper
- Non-stick Cooking Spray or Extra Virgin Olive Oil
- Optional Serving Suggestions: Over a bed of lettuce, over Rice, in a Tortilla Wrap, “Nacho” style with Tortilla Chips
- Optional Toppings: Sour Cream, Salsa, Shredded Cheese
Directions:
- Lightly spray large skillet or fry pan with non-stick cooking spray or add small amount of Extra Virgin Olive Oil and bring to medium to high heat.
- Add Chicken pieces. Sprinkle with S&P to taste. Cook thoroughly.
- When Chicken is fully cooked (juices run clear), add Corn, Black Beans, and Ro*Tel.
- Mix all ingredients together over medium to high heat for a few minutes until mixture is heated throughout and most of the juice evaporates off.
- Remove from stove and serve in your favorite style. Some ideas include: alone, on a Salad, over Rice, in a Wrap, or with Chips.
- Top with Sour Cream, Salsa, and/or Cheese if desired.
