Slow-Cooker Beef Stew

Recipe Description:

A hearty beef stew to warm you up on a cold day!

Ingredients:

  • 2 tbsp Unsalted Butter
  • 1 1/2 lbs Stew Beef (or London Broil, cut in 1 inch cubes)
  • 1 can Diced Tomatoes (with juice)
  • 2 cups Low-Sodium Beef Broth
  • 1 medium Yellow Onion, diced
  • 1 small package Baby Carrots, whole
  • 1 tbsp White Wine Vinegar
  • 1/2 tsp Cinnamon
  • 1/2 lb Egg Noodles
  • Salt and Pepper to taste

Directions:

  1. Melt 1 tbsp butter in large saucepan over medium heat.
  2. Add half of the meat and brown, 5 minutes. Set aside and brown the rest of the meat with remaining butter.
  3. Stir tomatoes and broth in crock pot set to Low.
  4. Add beef, onion, carrots, vinegar, cinnamon, salt, and pepper. Cover and cook for 2 hours, stirring occasionally.
  5. About 15 minutes before serving, add dry egg noodles to pot. Stir and cover. Stew is ready when noodles are cooked through and vegetables are tender.

Serves 4
