Many Bean Chili (a.k.a. Stephanie's World Famous Chili)

Recipe Description:

I have taken this recipe to many potlucks and other events - it is a hit, but so easy to make. It is a big source of protein, but low fat and very good for you. To make it even healthier, sometimes I will blend greens (kale or spinach) in a blender with the canned tomatoes and then add to the mix. By blending, the greens disappear -- you don't even taste them -- but all the healthy benefits are there.

Ingredients:

  • 1 can kidney beans
  • 1 can black beans
  • 1 can pinto beans
  • 1 medium onion, diced
  • 2 tsp minced garlic
  • 2 oz diced green chilis
  • 1 bunch finely chopped fresh parsley
  • 1 28 oz can tomatoes w/juice (can be diced, crushed or chopped)
  • 1 cup tvp (textured vegetable protein, i.e. Morningstar Crumbles meatless ground "beef"
  • 2 tsp salt
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 tbs chili powder
  • 1/4-1 cup water (depending on how thick you like your chili)
  • 3 tbs chopped fresh cilantro

Directions:

Put everything else but cilantro into crockpot. Adjust water depending on desired consistency (thick or soupy). Cook on high about 3 hours, on low for 6 or more. Just before serving add cilantro and enjoy!
