Italian Sub Stoup
Italian Sub Stoup (not quite a soup not quite a stew) is a great mix of flavors you would find at a sandwich shop. These include pepperoni, hot Italian sausage, ham, and my favorite, garlic bread chunks.
This is modified from a Rachael Ray recipe.
With a soup pot preheat on medium heat. Add olive oil and sauage. Brown and crumble the sausage, then add pepperoni and ham. After 2 minutes of cooking meats together, add the onion and cook for an additional 2 minutes. Add tomatoes, salt and pepper, bay leaves, parsley, and garlic. Follow this with chicken stock and bring to a boil. Stir in pasta and cook for 8 minutes. Make croutons while pasta cooks.
In large skillet heat about 1/4 cup olive over medium heat. Add garlic and cook one minute. Add bread cubes to garlic oil, and toss the cubes 5 or 6 minutes.
Ladle the stoup and float several toasty garlic bread cubes in each bowl.
