Recipe Name:

Italian Chicken with Flat Bread

Recipe Description:

A hearty Italian stew served over homemade flat bread.

Ingredients:

Crock Pot:

  • 4 to 5 chicken breasts
  • 4 cloves garlic, minced
  • 1 (28 oz) can diced tomatoes
  • 2 zucchini, chopped
  • 1 yellow squash, chopped
  • 2 cans cream of chicken soup
  • 2 tsp Italian seasoning, or 1/2 tsp oregano, 1/2 tsp rosemary, and 1 tsp basil
  • 1 bay leaf
  • 1 small can tomato sauce
  • Salt and Pepper

Flat Bread:

  • 4 c flour
  • 2 c warm water
  • 1 Tbsp yeast
  • 1 Tbsp sugar
  • 2 tsp salt

Directions:

For the crock pot:
Combine all ingredients in a crock pot and cook LOW for all day or HIGH for 6 hours. Remove chicken and chop, then return to crock pot. Remove bay leaf. Let sit while making the flat bread.

Flat bread:
Activate yeast in 1 cup of the warm water, then mix with the other ingredients. Spray a jelly roll pan with Pam, then press dough into the pan. Top with 1/2 cup melted butter and sprinkle with Parmesan cheese, Italian seasonings, and garlic powder. Bake at 400 degrees for 15 to 20 minutes.

To serve, place a piece of flat bread in a shallow bowl and cover with stew. Then top with Mozzarella or Parmesan cheese.
