Recipe Name:

Thai Chicken

Recipe Description:

This is a delicious way to change up the "usual" crock pot recipes. This recipe can be made as mild or as spicy as you like depending on the salsa you use. This recipe is especially yummy over pad thai or jasmine rice. Enjoy!

Ingredients:

  • 8 boneless skinless chicken thighs or boneless skinless chicken breasts
  • 3/4 cup of hot salsa
  • 1/4 cup peanut butter -- chunky or smooth, depends on your preference
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tsp ginger

Directions:

Cook in the crock pot for 8 hours on low. Garnish with chopped peanuts (suggestion) and serve over rice or noodles. A couple variations: add peas, green pepper, or onions.
